Caramelly Apple and Popcorn Plate

To achieve this yummy recipe, doesn’t even really require good cooking skills, many ingredients nor plenty of time.
Most likely everyone has these ingredients already at home anyway.
Caramelly apple and popcorn plate (No refined sugars, vegan & gluten-free)
Ingredients: (can make a small plate or bigger one)
Popcorn (pop the popcorn in a pot for the healthiest and best result, plus you’ll know they’re vegan)
Sweet apples (sliced, either raw and fresh or slightly cooked in the oven with cinnamon and a dollop of maple syrup)
The caramel sauce: (makes around 1,5 cups – store the rest in a jar)
1 cup Coconut cream
1 cup Coconut sugar/palm sugar
1/4 tsp Sea salt
1 tsp Vanilla extract
- Place coconut sugar, coconut cream and salt in a small saucepan.
Heat slowly while stirring to dissolve the coconut sugar.
- Bring mixture to a simmer. Cook for 10-15 minutes.
The sauce will thicken further as it cools.
- To test, take the saucepan off the heat.
Spread a little sauce on a saucer (or similar) and place in the freezer for a few minutes.
If the caramel doesn’t thicken (enough), simmer the sauce for a little longer.
- Stir vanilla extract into finished caramel sauce.
To make the plate, place the apple slices first. Add popcorn onto apples. Finish it off with a drizzle of caramel sauce, and melted vegan (dark) chocolate if you wish. Enjoy either warm or let it cool down in a freezer a bit!
